Rice Croquettes(Italian Style "Arancini") - cooking recipe

Ingredients
    3 Tbsp. butter
    1/2 c. finely chopped onion
    1 c. rice (preferably Italian long grain)
    3 c. hot chicken broth
    1/2 c. grated Parmesan cheese
    2 eggs, beaten lightly
    salt to taste
    1/4 lb. Mozzarella cheese, cut into 2/3-inch cubes
    1 c. dry bread crumbs
    oil (for deep frying)
Preparation
    In a saucepan, heat butter and saute onion until golden.
    Add rice; saute over medium heat, stirring constantly, about 2 minutes.
    Do not let rice brown.
    Add 1/2 cup chicken broth.
    When liquid is absorbed, which is almost immediately, add an additional cup of broth.
    Lower heat; simmer slowly until the broth is almost absorbed again, about 5 minutes.
    Add remaining chicken broth; simmer until rice has absorbed all the liquid.
    Stir the grated cheese into the rice; set aside until cooled slightly.
    Taste for salt and add, if needed.
    Stir in eggs, then refrigerate rice mixture until cold or until ready to use.
