Veal Scallopini - cooking recipe

Ingredients
    3 lb. veal round, sliced thin
    1/4 c. flour
    salt and pepper
    4 Tbsp. olive oil
    3 medium onions, finely chopped
    2 sprigs parsley, chopped
    1/2 c. white wine
    1 can mushrooms
Preparation
    Cut veal into 2-inch pieces.
    Shake in flour.
    Season with salt and pepper.
    Heat oil in a large skillet and brown veal in it.
    Add onions and parsley; stir until onions brown.
    Add mushrooms with their liquid, plus a little water.
    Cover tightly and cook over low heat for 1 hour.
    Add wine a half hour before done to avoid evaporation.
    Serves 6.
