Chicken Creole - cooking recipe

Ingredients
    4 skinless chicken breasts
    1 c. thinly sliced onion
    1 Tbsp. minced garlic
    1 c. chopped celery
    1/2 c. chopped green peppers
    1 c. tomatoes
    pepper to taste
    salt to taste
    2 Tbsp. chopped parsley
    2 tsp. vegetable oil
Preparation
    Brown chicken in cooking spray.
    Remove from skillet.
    Saute in oil, onion, garlic, celery and bell pepper until tender.
    Add parsley, pepper, salt and tomatoes.
    Simmer for 6 minutes.
    Add chicken to mixture and simmer for 1 hour.
    Stir occasionally.
