Zucchini Skillet Casserole - cooking recipe

Ingredients
    3 to 4 medium sized zucchini, coarsely chopped
    3 to 4 tomatoes, coarsely chopped
    2 onions, coarsely chopped
    8 oz. fresh mushrooms, sliced
    2 to 3 c. Cheddar cheese, shredded
    lemon-pepper seasoning
Preparation
    Cut all vegetables in nearly equal sized pieces.
    Put zucchini and onions in non-stick skillet and saute with a small amount of water until nearly tender.
    At this point, spoon or pour off as much liquid as possible.
    Add mushrooms and lots of lemon-pepper. Saute until nearly tender.
    Add tomatoes and stir until warmed. Spread mixture out in skillet and cover with cheese.
    Put cover on skillet and remove from heat.
    Let sit for 5 minutes or until cheese melts.
