Peanut Chicken - cooking recipe

Ingredients
    1 lb. cubed chicken
    4 tsp. cornstarch
    2 Tbsp. soy sauce
    1 tsp. sugar
    3 Tbsp. sherry
    3 Tbsp. oleo
    2 onions, sliced
    1/2 tsp. red pepper, crushed
    1/2 c. salted peanuts
    2 c. cooked rice
Preparation
    Blend 3 teaspoons cornstarch and 1 tablespoon soy sauce.
    Add chicken.
    Chill for 1 hour.
    Blend sugar, 1 teaspoon cornstarch, sherry and rest of soy sauce; set aside.
    Melt oleo in wok or skillet.
    Add chicken mixture.
    Stir-fry until chicken is done, about 3 minutes.
    Add onions and pepper.
    Stir-fry until onions are clear.
    Stir in sherry mixture.
    Cook until thickened.
    Stir in peanuts.
    Serve over rice.
