Reuben Style Skillet - cooking recipe

Ingredients
    1 can potato soup
    2 Tbsp. Thousand Island dressing
    1/2 c. water
    3 c. coleslaw mix
    2 c. cooked corned beef, cut into 2-inch strips
    2 c. plain croutons
    1 c. shredded Swiss cheese
    2 Tbsp. chopped parsley
Preparation
    In a 10-inch skillet, combine soup, dressing and water.
    Over high heat, bring to boiling.
    Stir in slaw mix, reducing heat to low.
    Cover; simmer for 5 minutes or until cabbage is tender-crisp, stirring twice.
    Stir in beef and cover.
    Cook 2 minutes or until heated, stirring once.
    Combine croutons, cheese and parsley.
    Sprinkle over mixture; heat 2 minutes or until cheese melts.
    Makes 4 servings.
