Swedish Potatis Korb(Potato Sausage) - cooking recipe
Ingredients

5 lb. all-purpose potatoes, peeled
1 lb. hamburger
2 tsp. salt
2 tsp. pepper
3 oz. casing (skins), soak in water 1/2 hour
1 medium onion
Preparation

Coarse grind potatoes and onion.
Mix all together the potatoes, onion, hamburger, salt and pepper in a bowl.
Using a hand sausage stuffing tube with casing attached, force in mixture into 2 feet of casing.
Flatten casing to half its thickness and leave ends 1-inch empty.
Place 2 to 3 lengths into 8 quarts of salted boiling water.
Cook 30 minutes.
Remove from water and serve hot with salad and French bread.
Serves 1 to 1 1/2 persons. Is good cold also.
