Ingredients

4 c. watermelon (including juice) seeded and mashed (4 lb. before rind is removed)
1/4 c. lemon juice
1/4 Tbsp. ground ginger
1 pkg. dry fruit pectin
5 1/2 c. sugar
Preparation

Prepare jars.
Combine all ingredients except sugar in large saucepan.
Bring to a full rolling boil over high heat, stirring constantly.
Quickly add 5 1/2 cups sugar.
Return to a full rolling boil and boil 1 minute.
Fill jars.
Leave undisturbed until lids seal, about 1 hour.
