Pina Colada Pie - cooking recipe

2 Tbsp. margarine
2 c. shredded coconut
1 (8 oz.) can crushed pineapple
1 envelope unflavored gelatin
2 eggs, separated
3 Tbsp. granulated sugar
1/2 c. pina colada mix
3 Tbsp. rum flavoring
1/2 c. whipping cream
1/4 c. toasted coconut
1/2 c. whipping cream
1 Tbsp. powdered sugar
1 1/2 Tbsp. rum flavoring
2 Tbsp. pineapple
Preparation

Beat whipping cream until it begins to thicken.
Beat in 1 tablespoon powdered sugar and rum flavoring.
Beat until cream holds shape.
Fold in 2 tablespoons well drained pineapple. Spread over cake and top with toasted coconut.
