Ground Nut Sauce(Uganda) - cooking recipe

Ingredients
    1 lb. raw peanuts
    2 Tbsp. oil
    3 to 4 onions, chopped
    2 tomatoes, chopped
    1 Tbsp. curry powder
    1 clove garlic
    1 tsp. ginger root
    1 tsp. salt
    3 c. water or milk
Preparation
    Pound peanuts with mortar and pestle, grind in blender, or put through meat grinder several times to make coarse peanut powder. Roast in pan for 1 minute.
    Fry in oil the onions, tomatoes, curry powder, garlic and ginger root. Add peanut powder.
    Cook 2 to 3 minutes.
    Add water or milk slowly to form sauce.
    Cook 15 to 20 minutes.
    Add salt.
    Serve over rice or plantains.
    Serves 6.
