Lemon Butter Bars - cooking recipe
Ingredients

1 c. plus 3 Tbsp. unsifted flour, divided
1 1/4 c. granulated sugar
1/2 c. softened butter
3 eggs or 2 jumbo eggs
1/2 tsp. baking powder
juice of 1 lemon
lemon peel from 1 lemon, freshly grated
1/2 to 1 c. confectioners sugar, sifted
nonstick cooking spray
Preparation

Crust: In a small bowl, mix 1 cup flour, 1/4 cup granulated sugar and butter until mixture is crumbly, resembling corn meal. Press on bottom of a square 9-inch baking pan that has been sprayed with nonstick cooking spray. Bake at 350\u00b0 for 10 minutes until edges are lightly browned. Leave oven on.
