Ingredients

1 (No. 2) can pie cherries
3/4 c. sugar
3 Tbsp. quick tapioca
2 eggs, separated
1/3 tsp. cream of tartar
sprinkling of salt
1/3 c. sugar
1/2 c. sifted cake flour
Preparation

Pour cherries into saucepan; crush.
Add 3/4 cup of sugar and tapioca.
Bring to a boil.
Reduce heat and simmer 5 minutes. Stir constantly.
Pour into 1 1/2-quart casserole.
