Spaghetti Carbonara - cooking recipe

1/4 lb. mild Italian sausage
1/4 lb. Prosciutto or cooked ham, thinly sliced
4 Tbsp. butter
1/2 c. chopped parsley
3 eggs, well beaten
1/2 c. grated Parmesan cheese
freshly ground black pepper
8 oz. spaghetti
Preparation

Remove casings from sausages and crumble or chop meat.
Finely chop Prosciutto.
In a frying pan over medium heat, melt 2 tablespoons of the butter.
Add sausages and half the Prosciutto to the pan and cook, stirring, for about 10 minutes.
Sausages will be browned and Prosciutto will be curled.
Stir in the rest of the Prosciutto.
Cook spaghetti according to directions and drain.
Add spaghetti to the hot meat mixture; add butter and parsley.
Mix quickly to blend.
At once, pour in eggs and quickly lift and mix the spaghetti to coat well with egg.
Sprinkle with Parmesan cheese and pepper.
Mix again and serve immediately with extra Parmesan cheese on the side.
Serves 3 to 4.
