Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant, peeled and sliced
    1 tsp. salt
    1/2 bell pepper, chopped
    2 tsp. grated onion
    2 c. tomatoes, drained
    2 eggs
    1/2 can cream of mushroom soup
    3/4 c. soft bread crumbs
    1/2 c. shredded sharp Cheddar cheese
    1 tsp. black pepper
Preparation
    Cook eggplant in boiling water until tender.
    Drain and add salt, bell pepper, black pepper, onion and tomatoes.
    Add eggs and bread crumbs.
    Pour into a 2-quart dish (greased), top with cheese and bake at 375\u00b0 for 30 minutes.
