V-8 Vegetable Juice - cooking recipe

Ingredients
    10 qt. tomatoes
    1/2 c. salt
    1 hot pepper (optional)
    1 1/2 c. celery
    5 large onions
    4 sweet peppers
    5 c. water
    1/2 c. vinegar
    1 c. sugar
Preparation
    Cook tomatoes
    in their own juice and run through sieve to remove
    peel
    and
    seeds.
    Cook together the celery, onions and peppers in the 5 cups water until tender, then run through blender.
    Add
    salt,
    vinegar,
    sugar,
    vegetable
    mixture
    to tomatoes and
    mix
    well.
    Bring to a rolling boil and put into sterilized jars and seal while hot.
    Yields 9 quarts.
