Spinach(Quelites) - cooking recipe
Ingredients

4 slices bacon, chopped
6 Tbsp. minced onion
4 c. raw spinach
1/4 c. cooked pinto beans
Preparation

Cook bacon and remove from skillet.
Saute onion in bacon drippings until transparent.
Drain off drippings.
Add bacon, spinach and beans and simmer over low heat for 10 minutes.
Serve immediately with hot flour tortillas.
Makes 4 to 6 (1/2 cup) servings.
