Briam - cooking recipe

Ingredients
    1 eggplant
    2 zucchini
    1 yellow squash
    1 large onion
    5 fresh tomatoes
    1/4 c. parsley
    6 potatoes, peeled
    2 Tbsp. tomato paste
    1/2 c. olive oil
Preparation
    Peel potatoes.
    Cut up all vegetables.
    Put into casserole dish.
    Mix tomato paste with 1/4 cup water.
    Pour over vegetables. Pour 1/2 cup oil over mixture.
    Stir.
    Bake at 350\u00b0, uncovered, for 2 hours.
    Stir frequently.
