Apple Oat Cake With Fruit Cream - cooking recipe

2 c. Pippin or Granny Smith apples
2 tsp. honey
1 Tbsp. lemon juice
1 1/4 c. wheat bran (raw)
1/2 c. nonfat powdered milk
1/2 c. oatmeal
2 egg whites
Preparation

Core, quarter and steam apples for 10 minutes.
Place cooked apples and their juice in food processor and process to a sauce. Add honey, lemon juice, wheat bran and powdered milk to applesauce and process to mix well.
Add oatmeal to apple mixture and process to just fold in, being careful not to overprocess and lose texture.
Whip egg whites until stiff but not dry and fold apple mixture into whipped egg whites.
Spray a 9 x 13-inch baking pan with nonstick spray and pour batter into pan.
Bake at 350\u00b0 for 30 to 40 minutes to brown.
Cool cake, cut into 24 pieces and top with Orange Cream.
