Low-Fat Chocolate Pound Cake - cooking recipe

Ingredients
    vegetable cooking spray
    2 tsp. baking powder
    3 Tbsp. unsweetened cocoa
    1/4 tsp. ground cinnamon
    3/4 c. sugar
    1/2 c. evaporated skim milk
    1 Tbsp. vanilla extract
    4 egg whites, stiffly beaten
    1 3/4 c. sifted cake flour
    1/4 tsp. salt
    1/2 c. vegetable oil
Preparation
    Coat the bottom of an 8 1/2 x 4 1/2 x 3-inch loaf pan with cooking spray; dust with flour and set aside.
    Combine cake flour and the next 5 ingredients in a large bowl.
    Add oil, milk and vanilla; beat at medium speed until batter is smooth (batter will be thick).
    Add one third of egg whites; stir mixture gently. Fold in the remaining egg whites.
    Pour batter into prepared pan. Bake at 325\u00b0 for 45 minutes, or until a wooden pick inserted in center comes out clean.
    Cool pan 10 minutes; remove from pan. Cool on wire rack.
    Yields 16 servings.
