4 oz. oil
2 oz. wine vinegar
2 Tbsp. peppercorns
1 clove garlic plus little more (if you like)
Preparation

Mix and rub on turkey.
Let set for short time.
Roast, covered, for 12 hours at 250\u00b0 for about 13 to 15 pound turkey.
