Microwave Peanut Brittle - cooking recipe
Ingredients

1 c. sugar
1/2 c. white corn syrup
1 c. fresh unroasted peanuts
1/8 tsp. salt
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda
Preparation

In a 2-quart glass mixing bowl (I like the big measuring bowl with a handle), stir together sugar, syrup, peanuts and salt. Mix well.
Microwave on High for 6 to 9 minutes until light brown. Add vanilla and butter.
Microwave on High for 1 or 2 minutes. Peanuts should be light brown and the syrup at the hard crack stage.
Add baking soda.
Stir until light and foamy.
Pour on lightly buttered cookie sheet.
Let cool at least 1/2 hour before breaking into pieces.
Keeps a long time in tightly closed container.
