Alligator Meatballs - cooking recipe

Ingredients
    1 lb. chopped alligator meat
    1 egg
    1 Tbsp. finely chopped onion
    2 Tbsp. finely chopped celery
    1 Tbsp. finely chopped parsley
    2 tsp. lemon pepper
    1/2 tsp. salt
    1/4 tsp. bread crumbs
    flour to dredge
    1 c. cooking oil
    2 Tbsp. finely chopped shallots
Preparation
    Combine all ingredients, form into 1-inch balls.
    Allow to set for 1 hour.
    Dredge with flour and fry until brown.
    Serve hot.
