Grapefruit Souffle Salad - cooking recipe

Ingredients
    1 c. boiling water
    1/2 c. grapefruit juice
    1 Tbsp. vinegar
    1 large grapefruit, peeled and diced (1 c.)
    1 (3 oz.) pkg. lime flavored gelatin
    1/2 c. mayonnaise or salad dressing
    1/2 c. chopped celery
Preparation
    Dissolve gelatin in boiling water.
    Add grapefruit juice, vinegar and mayonnaise.
    With rotary or electric beater, mix until well blended.
    Pour into 4-cup refrigerator tray.
    Chill until partially set.
    Turn mixture into bowl and beat until fluffy. Fold in grapefruit and celery. Return to tray. Chill 5 to 6 hours or overnight.
    Serve on lettuce leaves.
    If desired, top each serving with a grapefruit section.
    Makes 5 servings.
