Hoppin John - cooking recipe

Ingredients
    6 slices bacon, cooked until crisp (save 2 Tbsp. grease)
    1 pkg. Success brown rice, cooked according to pkg.
    1 onion, chopped
    3 scallions, chopped
    2 stalks celery, chopped
    1 can black-eyed peas, drained
Preparation
    Cook rice.
    Saute onion, scallions and celery in bacon fat. Toss with crumbled bacon and the hot rice.
    Serve immediately.
