Stilton Leek Soup - cooking recipe

Ingredients
    1 c. leek, finely chopped
    1/2 c. celery, finely chopped
    1/2 c. carrot, finely chopped
    1 large garlic, finely chopped
    1 bay leaf
    1/2 tsp. thyme
    2 Tbsp. butter
    2 baking potatoes
    6 c. chicken broth
    1 c. half and half
    1 1/2 c. Stilton (Blue) cheese, crumbled
    Tawny Port
    chives (garnish)
Preparation
    Cook leek, garlic, celery, carrot, bay leaf and thyme for 5 minutes in butter.
    Add potatoes and broth; cook until tender. Discard bay leaf.
    Put through blender.
    Stir in half and half and heat.
    Whisk in cheese until smooth.
    Add Port and salt and pepper to taste.
    Serve with chives as garish.
    Do not boil.
