Moldavian Potato Salad - cooking recipe

Ingredients
    6 medium red potatoes, with skins
    1/3 c. olive oil
    2 to 3 large garlic cloves, pressed
    1 c. Feta cheese, crumbled
    1/4 c. scallions, finely chopped
    3 Tbsp. red wine vinegar
    3 Tbsp. fresh or 2 tsp. dried chopped dill
    salt and pepper to taste
Preparation
    Boil potatoes for 18 to 20 minutes.
    Cool until manageable and cut in 3/4-inch cubes.
    Pour garlic and olive oil on potatoes. Toss and let come to room temperature.
    Add Feta and scallions and toss.
    Sprinkle on vinegar (more to taste, if desired), dill, salt and pepper.
    Let sit at least 1 hour on counter to let flavors settle.
    Serves 4.
