Vegetable Pie - cooking recipe
Ingredients

1/8 c. olive oil
2 Tbsp. margarine
1 medium eggplant, peeled and cubed
1 large onion, chopped
2 medium zucchini, cubed
4 medium tomatoes, peeled and cubed
3 eggs
3/4 c. Parmesan cheese, grated
1 Tbsp. parsley, minced
1/4 tsp. basil
1/8 tsp. oregano
1/2 lb. thinly sliced Mozzarella cheese
1/4 tsp. salt
1/4 tsp. pepper
Preparation

Preheat oven to 400\u00b0.
Saute eggplant, onion and zucchini in oil for 5 minutes.
Add tomatoes.
Cover, reduce heat to low and cook for 20 minutes until soft.
Transfer to a mixing bowl to cool.
