Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled
    1 medium onion, chopped
    2 cloves garlic, chopped
    1/2 green pepper, chopped
    parsley
    2 Tbsp. bacon drippings
    4 slices dry bread
    1 lb. shrimp
    1 lb. crabmeat
    salt and pepper
    dash of red pepper
    buttered bread crumbs
Preparation
    Boil eggplant in salted water until tender; drain and slice. Saute onion, garlic, green pepper and parsley in bacon drippings. Remove from heat; add eggplant.
    Soak bread in water; squeeze out excess liquid.
    Add to eggplant mixture.
    Add seafood; season to taste.
    Place in well-greased casserole or baking shells.
    Top with buttered bread crumbs.
    Bake at 350\u00b0 for 30 minutes.
