Low-Fat Banana Snack Cake - cooking recipe

Ingredients
    1 1/4 c. mashed bananas
    3/4 c. fat-free, cholesterol-free egg substitute
    1/2 c. buttermilk or plain yogurt (stir)
    1/2 c. plus 2 Tbsp. brown sugar
    1/3 c. applesauce
    1 tsp. vanilla extract
    1/2 tsp. banana extract (optional)
    2 c. wheat flour
    2 tsp. baking powder
    1 tsp. baking soda
    1/4 tsp. cinnamon
Preparation
    Heat oven to 375\u00b0.
    Lightly grease a 9-inch square pan.
    Mix banana, egg substitute, buttermilk, 1/2 cup of brown sugar, applesauce and extracts until blended.
    Stir in flour, baking soda and baking powder until smooth.
    Scrape into baking pan.
    Sprinkle with 2 tablespoons brown sugar and 1/4 teaspoon cinnamon.
    Bake 20 to 25 minutes.
