Swiss Potato Soup - cooking recipe

Ingredients
    2 Tbsp. margarine
    1/2 c. coarsely shredded carrot
    1 c. chicken broth
    1/8 tsp. ground nutmeg
    1 c. shredded Swiss cheese
    1 large chopped onion
    3 c. low-fat milk
    1/2 tsp. salt
    1/4 tsp. pepper
    instant potato flakes
Preparation
    In a medium size heavy saucepan, melt butter.
    Add onion and carrot; saute for about 5 minutes, or until tender.
    Stir in milk, broth, salt, nutmeg and pepper.
    Bring to a boil.
    Stir in potato flakes; cook until slightly thickened (about 1 minute).
    Add cheese; cook and stir over medium heat until blended.
