Stir-Fry Lemon Chicken - cooking recipe

Ingredients
    1 tsp. cornstarch
    1/2 tsp. salt
    1/4 tsp. thyme
    1/4 c. lemon juice
    1/4 c. water
    3 Tbsp. corn oil, divided
    2 whole chicken breasts, boned, skinned and cut into strips
    1 large carrot, sliced
    1 lb. zucchini, sliced (about 2 c.)
    1 c. sliced celery
    1 clove garlic, minced
    grated rind of 1 lemon
Preparation
    In a small bowl, stir together cornstarch, salt and thyme. Stir in lemon juice and water until smooth. Set aside.
