Ingredients

1 c. brown long grain rice
1 c. non-sweetened coconut milk
1 c. water
1/2 tsp. finely diced ginger or 1 tsp. dried powdered ginger
Preparation

Bring water, coconut milk and ginger to boil. Add rice. Cover. Reduce heat to low. Cook for about 20 to 25 minutes. Turn off heat and let stand with lid on for 8 to 10 minutes longer. Serves 2 to 4.
