Easy Sweet And Sour Chicken - cooking recipe

Ingredients
    2 lb. chicken pieces
    1 (8 oz.) jar lo-cal Russian dressing
    1 (8 oz.) jar lo-cal apricot preserves
    1 packet dry onion soup mix
    1/4 c. water
    pineapple chunks and green pepper strips (optional)
Preparation
    Put chicken in baking dish.
    Blend all remaining ingredients except pineapple and peppers.
    Pour mixture over chicken.
    Bake at 350\u00b0 for 1/2 hour, covered.
    Uncover and add pineapple and pepper strips.
    Bake another 1/2 hour.
    Serve over rice.
