2 c. powdered sugar
1 c. butter or margarine
2 eggs
1 tsp. vanilla
1/2 tsp. rum extract
3 c. flour
1 tsp. salt
1 c. shredded coconut
3/4 c. butterscotch chips
1/2 c. red candied cherries
1/2 c. green candied cherries
Preparation

Beat together powdered sugar and butter.
Add eggs, vanilla and rum extract; mix.
Add flour, salt and shredded coconut; mix well.
Roll into 1-inch balls.
Place on ungreased cookie sheet; flatten cookies with bottom of glass dipped in granulated sugar. Place a butterscotch morsel in center of each cookie.
Take candied cherries and cut in thin wedges.
Place wedges in strips down from butterscotch chips, alternating red and green until you have a circle to resemble a poinsettia.
Bake at 375\u00b0 for 12 minutes.
