Peschealla Piemontepe(Piedmontese Stuffed Peaches) - cooking recipe

7 large fresh peaches
2 1/2 Tbsp. sugar
4 Tbsp. butter
1 egg yolk, beaten
5 almond macaroons, crumbled
Preparation

Wash 6 peaches, dry and cut in half.
Remove stems. Scoop out a little of the peach flesh into middle and put into bowl.
Mash to a puree.
Add sugar, 2 tablespoons of butter, egg yolk and macaroons to puree.
Mix well and fill each peach half with some of the mixture, piling it up in the middle.
Arrange the peach halves in a ovenproof dish and dot with the remaining butter. Bake in a moderate 375\u00b0 oven for about 1 hour.
