Spicy Mexican Nut Mix - cooking recipe

12 c. bite-size shredded wheat squares
2 c. pecan pieces
2 egg whites
1/2 c. honey
1/4 c. chili powder
1 Tbsp. thyme
1 Tbsp. salt
1 Tbsp. cayenne pepper
Preparation

Preheat oven to 325\u00b0. In small bowl, toss together shredded wheat and nuts; set aside. In small bowl, place the egg whites, honey, chili powder, thyme, salt and cayenne; stir vigorously with a fork until completely blended. Pour over the nut mixture and toss continuously for about 2 minutes, to distribute the flavors and coat the cereal and nuts evenly. Transfer the mixture to a baking pan and bake for about 20 minutes, stirring once or twice, until the mixture has browned lightly. Cool to room temperature. Store in airtight container. Makes about 4 quarts.
