Spuds A La Elegant - cooking recipe

Ingredients
    6 medium potatoes
    1 (8 oz.) softened cream cheese
    1 beaten egg
    1/4 tsp. salt
    1/3 c. finely chopped onion
    1/4 c. diced pimento
Preparation
    Peel, quarter and cook potatoes in boiling, lightly salted water for 20 to 25 minutes or until tender; drain.
    Mash potatoes. Add cream cheese, egg, salt and dash of pepper; beat until smooth. Stir in onion and pimento.
    If mixture seems dry, stir in 1 to 2 tablespoons milk.
    Transfer to buttered, 1-quart, round casserole.
