Squash Casserole - cooking recipe

Ingredients
    2 lb. fresh or 3 boxes squash (crookneck or zucchini)
    1 bell pepper, chopped
    1 can green chilies
    1 onion, chopped
    2 eggs, slightly beaten
    1/2 c. mayonnaise
    1/2 c. grated Cheddar cheese (can substitute one can Cheddar cheese soup)
    salt and pepper to taste
    Parmesan cheese
Preparation
    Steam squash, green bell pepper, green chilies and onion until tender (can microwave); drain well.
    Beat eggs; add to vegetables with mayonnaise, Cheddar cheese, salt and pepper.
    Mix well. Sprinkle with Parmesan cheese.
    Pour into greased casserole.
    Bake at 300\u00b0 for 1 hour.
    Serves 8.
