Depression Carrot Cake - cooking recipe

3 c. unbleached flour
3 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
2 c. shredded carrots
2/3 c. oil
1 c. honey
1/2 c. molasses
3 eggs
1 c. crushed pineapple in juice, undrained
3/4 c. chopped raisins
3/4 c. chopped walnuts
Preparation

Heat oven to 350\u00b0.
Oil and flour two 9 x 1/2-inch round pans or one 13 x 9-inch pan.
In large bowl, combine all ingredients, except raisins and nuts, at low speed until well blended.
Stir in raisins and nuts.
Pour batter evenly into prepared pans. Bake for 35 to 45 minutes or until cake feels firm when touched lightly. Cool completely.
