Italian Potato Salad (For A Big Family) - cooking recipe

Ingredients
    3 to 5 lb. potatoes
    3 bunches green onion, cut into 1/2-inch pieces
    1 bunch celery, cut into 1/2-inch pieces
    1 garlic clove, chopped
    2 c. fresh parsley, chopped
    salt to taste
    coarsely ground black pepper
    1 c. extra-virgin olive oil
Preparation
    Boil potatoes in skins until done, but still firm.
    Peel and cut into 1-inch cubes.
    Put in large mixing bowl and add onion and celery.
    Add garlic and parsley.
    Season with salt and pepper. Add oil.
    Serve at room temperature.
    Makes 10 to 12 servings. Enjoy!
