Spinach Souffle - cooking recipe

Ingredients
    1 Tbsp. butter
    1 Tbsp. chopped onions
    2 Tbsp. grated cheese
    1 1/2 Tbsp. flour
    1 c. milk
    4 egg yolks
    4 egg whites, beaten
    3/4 tsp. salt
    pepper
    2 c. cooked, chopped spinach
Preparation
    Brown onions in butter.
    Stir in flour; add milk slowly.
    Add spinach, cheese and seasonings.
    Heat; remove from fire.
    Mix in unbeaten yolks.
    Cool; fold in whites.
    Pour into greased baking dish; set dish in pan of water in a moderate oven.
    Bake until mixture rises and sets (about 30 minutes).
    Serves 8.
