Pot Of "Irish Gold Coins" - cooking recipe

Ingredients
    48 vanilla wafers
    1/2 c. peanut butter
    12 oz. butterscotch chips
Preparation
    Spread peanut butter on 24 vanilla wafers cookies.
    Top with remaining cookies to make sandwiches.
    Melt butterscotch chips over double boiler.
    Dip each cookie sandwich into melted butterscotch and place on waxed paper to cool.
    Yield: 2 dozen \"coins.\"
