Jamaican Red Bean Soup - cooking recipe

3 c. smoked ham, in 1/2-inch cubes
2 (15 oz.) cans red beans, drained and rinsed
2 (14 oz.) cans beef broth
2 c. white potatoes, in 1/2-inch cubes
2 c. sweet potatoes, in 1/2-inch cubes
3/4 c. chopped celery
1/4 c. instant minced onion
1 1/4 tsp. ground allspice
1/4 tsp. ground red pepper
1/4 tsp. black pepper
2 Tbsp. cornstarch
Preparation

In a large soup pot, combine all ingredients except flour with an additional 4 cups of water. Bring to the boil; reduce heat and simmer, covered, for 25 to 30 minutes. In a cup, combine cornstarch with a bit of water until smooth. Stir into soup. Bring back to the boil and simmer for another 8 to 10 minutes. Makes 6 to 7 servings.
