Cruzan Native Side Dish Served With Roast Meats - cooking recipe

Ingredients
    3 lb. potatoes
    2 tsp. butter
    1/2 stalk celery, minced
    1/4 tsp. thyme
    3 Tbsp. sugar
    1/4 c. prunes, pitted and chopped
    1 large onion, minced
    1/2 medium bell pepper, minced
    1 can tomato sauce
    dash of black pepper
    1/4 c. raisins
Preparation
    Peel and boil potatoes in salted water.
    Mash when cooked. Saute pepper, celery and onions in little oil over a low flame until tender but not burnt.
    Add tomato sauce and cook a few minutes.
    Add mixture to mashed potatoes.
    Mix thoroughly.
    Add raisins, prunes and butter.
    Bake in greased shallow baking pan at 325\u00b0 for about 30 minutes or until brown.
