Watermelon Pickles - cooking recipe
Ingredients

10 lb. watermelon rind, peeled and cut into cubes
20 c. sugar
2 qt. vinegar
2 Tbsp. mixed spices
Preparation

Cover rind with cold water and cook until tender; drain off part of the water.
Add salt, sugar and vinegar.
Cook until clear and syrupy like heavy cream.
Let stand until cold or a day or so, then put into jars.
Add salt to your taste.
