Broccoli Casserole - cooking recipe

2 boxes frozen broccoli
1 can cream of mushroom soup
2 eggs
1/2 c. mayonnaise
1 c. shredded cheddar cheese
17 ritz crackers
6 - 7 Tbsp. butter
Preparation

Preheat oven to 350.
Cook broccoli and drain.
Crack eggs into large bowl and whisk together.
Add soup, mayonnaise and cheese.
Stir well.
Add broccoli.
Stir well.
Place mixture into ungreased 8 x 8 x 2 casserole dish.
Coarsely crush the Ritz crackers.
Melt butter and pour over the crackers.
Stir gently. Cover the top of the broccoli mixture with the crackers and butter topping.
Bake for about 40 minutes or until set.
