Creamy Veal - cooking recipe

Ingredients
    1 lb. veal cutlets (untrimmed)
    4 Tbsp. butter
    1 1/2 pt. cream
Preparation
    Heat heavy skillet.
    When very hot, add 2 tablespoons butter. When it smokes, add cutlets and brown thoroughly on both sides. Remove from fire, trim off all gristle and fat, cut into 1/2-inch cubes.
    Add remaining to pan and when hot, add cubed veal.
    Again, brown on all sides.
    When meat is browned, add cream and salt. Lower heat and simmer 30 to 40 minutes until thickened.
    Do not boil.
    Serve over toast, toasted on one side only, toasted side down.
    Serves 2.
