Hummingbird Cake(Irene Lucas' Recipe) - cooking recipe
Ingredients

3 c. all-purpose flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. chopped almonds (I like almonds, but have used pecans)
3 eggs
1 1/2 c. vegetable oil
1 tsp. almond or vanilla extract
2 c. chopped firm, ripe bananas
1 (8 oz.) can crushed pineapple
Frosting (choice of two, see below)
Preparation

Mix and sift flour, sugar, baking soda, salt and cinnamon. Stir in almonds. Beat eggs slightly; combine with oil, almond extract, bananas and undrained pineapple. Add to dry ingredients; mix thoroughly, but do not beat. Spoon batter into a well oiled 10-inch tube pan. Bake at 325\u00b0 for 1 hour and 20 minutes.
Remove from oven; let stand 10 to 15 minutes.
Invert on cake rack. Remove pan.
Cool thoroughly before frosting.
Makes 12 to 16 servings.
