Winter Squash Quiche - cooking recipe

Ingredients
    1 (9-inch) pie shell
    4 slices bacon
    2 Tbsp. chopped onion
    1 c. shredded Swiss cheese
    3 beaten eggs
    1 1/2 c. milk
    1 c. mashed, cooked winter squash
    1/2 tsp. salt
    1/2 tsp. nutmeg
    1/2 tsp. pepper
Preparation
    Brown bacon and drain.
    Crumble and set aside.
    Reserve 1 tablespoon of bacon drippings.
    Cook onion in bacon drippings until tender.
    Sprinkle cheese, bacon and onion in the warm pastry shell.
    In a bowl, combine the eggs, milk, squash, salt, nutmeg and pepper.
    Pour in pie shell.
    Bake at 325\u00b0 for 40 to 50 minutes.
    Let stand 10 minutes.
    Garnish with bacon crumbs.
