Bagels - cooking recipe

Ingredients
    2 Tbsp. margarine
    1 c. milk, scalded
    2 Tbsp. dry yeast (2 pkg.)
    pinch of sugar
    2 c. warm water
    8 c. unbleached all-purpose flour (approximately)
    1 Tbsp. salt
    2 qt. water
    2 Tbsp. kosher salt
    sesame, poppy or caraway seed
Preparation
    Melt the margarine in the scalded milk.
    Proof the yeast with a pinch of sugar in the warm water.
    Combine the two liquid mixtures and gradually blend in the flour and the salt until a soft, sticky dough is formed.
    (A food processor is fine to start this.)
    Knead well and place in greased bowl.
    Cover and let rise in a warm place until doubled in bulk (about 1 hour).
    Preheat the oven to 400\u00b0.
    Boil about 3 quarts water with 2 tablespoons kosher salt.
